“I need to eat something” is what I thought to myself as I sat down to write this and looked at the clock. Just like any other early afternoon, I walked out of my home office, strolled into my kitchen and pulled out a jar from the fridge.

Less than 15 minutes later (no joke), Mr. Sinatra and I were sitting down to a super-satisfying, healthy meal: a cup of homemade butternut squash soup, a hearty green salad with homemade dijon mustard dressing, and a slice of buttery sprouted-grain toast topped with a poached egg.

And after a few swipes of a sponge and a run of the faucet, my kitchen was sparkling clean again. Well, not sparkling – I’m only human.

This is a typical weekday for me: a quick, spur-of-the-moment meal that is satisfying and damn good for me – and keeps me productive for the rest of the day.

Breakfast and dinner are the same: unplanned, quick, and delicious.

Before you think to yourself, “she’s obviously a cook – that’s not something I could do”, let me tell you something: When it comes to “housework”…

I am lazy. SUPER lazy. Just ask my family. My husband. Any of my former roommates.

But I LOVE food and I care about my health.

So here’s my goal: get the most out of my meals with the least amount of effort. I have things to do, places to be. I can’t be spending all my time in the kitchen!
